Istanbul in Summer: Gastro Route and Best Restaurants

Istanbul in summer is not just heat and tourist crowds - it's a real gastronomic celebration. In July and August the city moves to a particular rhythm: fishermen from the Bosphorus bring fresh catch straight to the waterfront, street vendors sell chilled pomegranate juice on every corner, and rooftop restaurants run until dawn.

In summer 2024 Istanbul ranked third in Conde Nast Traveller's list of best gastronomic cities in Europe - and no wonder. Here the culinary traditions of the Middle East, Balkans and Mediterranean cross, creating a unique taste impossible to reproduce anywhere else.

In this gastro route we collected the best spots for a summer visit - from the seafood restaurants of Bebek to the Spice Bazaar, from street mussels on Istiklal to rooftop bars with Bosphorus views. Budget from 20 to 100 EUR per day - for any taste and wallet.

Summer Weather in Istanbul

Summer in Istanbul is hot and humid - accept it as given. June offers a reprieve: 25-28C, sea warms to 22C, you can walk all day. July and August are peak heat: 30-35C, humidity 70-80%, asphalt heats up so much you want to escape to an air-conditioned cafe. Almost no precipitation - July is considered the driest month of the year.

Practical tip: go out for walks in the morning before 10 AM and in the evening after 6 PM. Spend midday in museums, covered bazaars or restaurants. The Bosphorus creates a light breeze on the waterfront - heat is easier to bear there.

What to Try in Istanbul in Summer

Balik ekmek - grilled mackerel in fresh bread, served straight from boats by the Galata Bridge. A classic Istanbul dish best eaten standing by the water. A portion costs about 50 lira.

Midye dolma - mussels stuffed with spiced rice. Sold on every corner, eaten straight from the shell. The optimal summer snack - cold, refreshing. Price - 5-7 lira each.

Lahmacun - thin flatbread with minced meat and herbs, rolled up. Especially good in summer with cold ayran.

Seasonal desserts: in July nectarine dondurma (Turkish ice cream) appears, in August watermelon sorbet. Look in the Besiktas and Karakoy districts.

Where to Go in the Heat: Air-Conditioned Restaurants

Mikla (Marmara Pera, 18th floor) - Michelin-starred restaurant with a stunning rooftop terrace. Modern Anatolian cuisine, book 2-3 weeks ahead. Average check - 80-120 EUR.

Karakoy Lokantasi - classic Turkish lokanta with excellent mezze and fresh fish. Air conditioning, pleasant interior, democratic prices - 20-40 EUR.

Pandeli at the Spice Bazaar - restaurant opened in 1901 and hardly changed since. Cool, quiet, historical atmosphere. Excellent lentil soup and kofte.

Bebek waterfront - upscale district with cafes right by the water. Get there on bus 22 or 22E from Taksim. Here you get the freshest Bosphorus breeze and the city's best coffee shops.

Gastro Route for One Day

Day (12-4 PM): Ferry to Karakoy, walk through Galata. Lunch at Karakoy Lokantasi, then - Spice Bazaar (Misir Carsisi) for spices and Turkish delight.

Evening (7-10 PM): Galata Bridge - balik ekmek at the boats, then walk along Istiklal with a stop at the mussel vendors. End with dinner on a Beyoglu terrace overlooking the Golden Horn.

Gastronomic Souvenirs from Istanbul

The best gifts from Istanbul are food. Turkish tea (cay) in tin containers from tea shops in the Grand Bazaar. Spices - go to the Spice Bazaar, haggling mandatory. Lokum - buy at Hafiz Mustafa (founded 1864), not at tourist stalls. Izmir figs and Malatya apricots sold at Kadikoy market. All of it tastier, more fragrant and cheaper than at souvenir shops near Hagia Sophia.
